How to cook genestrata
Products
Cold chicken bouillon - 2 glasses
Chicken egg yolks - 4 pieces
Dessert wine - 20 milliliters
Butter - 50 grams
Ground cinnamon - 1/4 teaspoon
Sugar, nutmeg and salt - pinch each
How to make genestrata
1. Place 4 yolks in a plate and beat with a fork / whisk / mixer / blender.
2. While shaking, gradually add dessert wine and chicken broth.
3. Finally, add cinnamon salt.
4. Strain the resulting mixture into a saucepan using a fine sieve and cook for 5 minutes over low heat, stirring constantly.
5. Add butter, stir again.
6. After the soup thickens, add the sugar and nutmeg.

- Ginestrata is a Florentine dish. It is believed that the soup has healing properties, the jinestrat was given strength to the wounded and sick.- Traditionally in Italy, ginestrata is served to newlyweds after their wedding night, as well as upon returning from a honeymoon trip.
- Essential ingredients for Ginestrata: chicken broth, chicken egg yolks, dessert wine, butter, nutmeg and sugar.
- Soup is served hot, immediately after cooking. If desired, the soup can be sprinkled with onions or parsley.
Ginestrata spoils quickly, so it is usually cooked for 1 meal.
- To increase satiety, you can add boiled rice or potatoes.
