How to cook shulum
Products
Lamb with bone - 1 kilogram
Eggplant - 1 piece
Tomato - 2 pieces
Sweet pepper - 2 pieces
Carrots - 1 piece
Onions - 2 pieces
Greens - a large bunch (dill, parsley, cilantro)
Bay leaf - 2 pieces
Salt - 2 tablespoons
Black pepper - 1 teaspoon
Lamb seasoning - 1 teaspoon
Water - 4 liters
Food preparation
1. Wash the lamb, cut into pieces.
2. Peel the onion.
3. Cut 2 bell peppers in half and remove the seed box.
4. Cut the eggplant into 6 pieces.
5. Coarsely chop a large bunch of greens.
Cooking in a cauldron
1. Put mutton in a cauldron, add a teaspoon of lamb seasoning, ground black pepper, 2 tablespoons of salt. Pour in 4 liters of water.
2. Set the cauldron over the fire, cook the meat for 1.5 hours. Remove the formed foam.
3. In the broth add the eggplant, cut into large pieces and halves of pepper. 2 onions, 2 tomatoes, one carrot, two bay leaves whole.
4. Cook vegetables in broth for 30 minutes.
5. Put chopped greens in a cauldron, cover and let stand for 20 minutes.
6. Use a slotted spoon to catch vegetables from the broth. Discard the onion, and cut the rest into pieces and put in a dish.
Put a piece of meat in portioned plates and pour over the broth. Everyone will take vegetables from the common dish.
Fusofacts
- Shulum is a national Uzbek dish. Meat soup with vegetables is traditionally cooked from lamb, if not, pork or beef will do.- It should be borne in mind that when cooking in a cauldron over an open fire, the water evaporates strongly. There should be at least 2.5 liters of broth. Add water if necessary, but it is advisable to do this before laying the vegetables.
- Shulum can be cooked in a saucepan. Alternatively: cut the vegetables into pieces before placing them in the broth and do not catch them. Add potatoes if desired.
How to cook shulum in a saucepan
1. Place the beef legs in a saucepan and add 4 liters of water. Cook for 7 hours under a half-closed lid. Remove foam thoroughly. The fire is very small.
2.Add tripe, peppercorns, whole leaves of lavrushka.
3. Add chopped tripe, cook for about an hour. Add greens.
Additionally to shulum
1. Cut the radish into slices, put on a plate, salt, sprinkle with vegetable oil.
2. Pour the garlic into a bowl, pour over a ladle of broth, add grape vinegar.
