If your roots were stored on a frosty balcony, it is enough to transfer the potatoes to a warm room, in which the temperature is at least +15 degrees, and leave it to lie down for several days - the sweetness will go away. Starch, which has become sugar at low temperatures, will recover in the heat, and the potatoes will no longer be sweet.
Another way is to peel potatoes and put them in water. After an hour, drain the water, and pour the potatoes with clean water and put on the stove. It is worth adding a little vinegar to the pan so that the card does not darken.
And you can also use potatoes in dishes where this sweetness will play into your hands or will not be noticeable. For example, in a stew or in complex dishes with meat and other vegetables. Spices and salt will also make the sweetness of the potato less cloying. Cook sweet potatoes as usual.
