Sour fruits (apples, red currants, apricots, etc.) can be rolled into compote by simply sterilizing. It turns out not very logical: the more sour the fruits, the less they need sugar. So keep to a minimum or take extra effort to harvest.
Compote in liter jars is boiled less often - for dessert, when the jar is filled to the brim with fruits and berries, and filled with syrup. In this case, make the syrup thicker than for drinking compote: for a jar filled to the brim with berries / fruits, at least 7 tablespoons of sugar.
