Why is dried fruit compote bitter?

From late autumn until summer, fresh compotes are cooked mainly from dried fruits. Any dried fruit is suitable, but even if you follow all the rules for cooking compote, the finished drink can taste noticeably bitter. If this happens, it is most likely the fault of the prunes, namely the method of drying the plums. The fact is that plums are dried in special industrial dryers, and this fruit can vary from fruit to fruit in juiciness, so it can easily burn. And if this happened, then the compote with the addition of such prunes will also taste bitter.
The second common reason for the bitterness of compote is the cooking of berries and fruits with seeds. The seeds contain hydrocyanic acid, and therefore can impart significant bitterness.
Well, the third reason is unsweetened plums or the use of unripe fruit for drying.
To save the compote, just add a little more sugar and acidify with any citrus juice.
Important: if the bitterness gives off something chemical, it is likely that preservatives were incorrectly used during drying in production. In this case, drinking the drink is dangerous to health.
